The street food is not born yesterday!
In August many fairs and festivals in countries are an opportunity to enjoy light snacks and delicious, prepared according to tradition, great for snacks and breaks not binding.

If you are around the valley of the Garfagnana and the Serchio valley, you can go and search for crisciolette, necci, cecina, cigerani, migliacci, fogacce levers, cooked directly over the fire in the texts of iron, terracotta and even stone. They are the “street foods” of the tradition prepared with all flours available: formenton ottofile, spelled, wheat, catagne … and enriched with a piece of cheese, a sausage, a bit ‘of cottage cheese or honey-scented pastures , coast or chestnut.
