“We collect the olives from the tree,” says Patrizia, “without waiting for they fall from the sun, when it is too ripe, and we pour in our mill with millstones, obtaining a paste which is then placed on the discs of straw. These are stacked and pressed with the press and the liquid that comes out of it ends up in the pools, where, through the separators, is divided by water and then filtered throughcotton wool. It’s a long process and very mild one, which leads to bottling.
