The family of Elena Carmignani, wine producer, is one of the oldest in Monatecarlo, active since 1386 have been handed down thispassion from generation to generation. Eight hectares of vineyard yield good whites and reds from various grape varieties: Trebbiano, Vermentino, Malvasia white, Roussanne, Semillion. For the Montecarlo DOC red wines: sangiovese, canaiolo, syrah, merlot, cabernet, ciliegiolo and other varieties for the IGT, that, unlike the DOC, have a less rigorous discipline and allow you to add creativity and tastein production.
Among the labels, a chardonnay in purity awarded of a certificate of merit from the Region of Tuscany, and even a red barricaded, Theorema, composed of 30% Merlot Cabernet Syrah and 10% Sangiovese, produced in toasted oak barrels purchased directly atBordeaux.
“The attention to the rooted,” says Elena, “is a prerequisite for making good wine. Before sowing chemical analysis and organolepticsoil are done in order to understand if there are deficiencies in minerals. Each barbatella has its ideal plot on which to grow and we have to prepare it properly. The winemaking process is done entirely by hand without the aid of any machinery, because we hold to our work and we do it with precision, although it is more tiring. Our product is then stored with refrigeration systems, managed to finda good balance between discipline and tradition, this allows us to produce a very fragrant wine that also keeps a good acidity which we are satisfied of. We distribute our wines in wine-bars and local restaurants. What I would like to teach my clients is that oflearning how to drink, smell the different fragrances in a wine and learn to combine the dishes, each wine has its own history andmany perfumes, I really wish everyone could enjoy both.“
