For Halloween we propose a version of pancakes with spelled … and the result of the day!

pumpkin pancakes and spelt
 
what is necessary:
6 people
200g yellow pumpkin
200g boiled spelt
100g flour
80g of butter
50g of grated pecorino cheese
2 shallots
2 eggs
a glass of white wine
a glass of milk
salt and pepper
400g of bèchamel sauce

for the bèchamel sauce:
(serves for 400g)
50g flour
60g of butter
½ litre of milk

 
how you doing:
To prepare the besciamel sauce, melt the butter and add the flour, then pour the milk, previously warmed, stir and boil for 5 minutes.
In a bowl, work the eggs with the flour, add 20g of melted butter, a pinch of salt and dilute the whole with milk, stirring constantly.
With this dough make some crepes of about 20cm in diameter.
In a skillet, melt the remaining butter, pumpkin choppend into cubes about 1cm and chopped shallots for about 15 minutes.
Add white wine, salt and pepper and continue cooking for further 10 minutes.
Combine half of the bèchamel sauce to spelt, pecorino cheese and pumpkin and with this compund fill the crepes.
Fold the crepes in four like handkerchief and place them in a buttered baking dish. Pour the remaining sauce, sprinkle with parmesan and place in the oven at 220 ° C for 15 minutes.
