The bean cannellino di San Ginese or di of St. Alessio is a variety determinedto grow (cm. 40-50) and with good contemporary ripening. The color of the pod maturity is white to very light yellow. For cooking it is used both fresh and dried seed that has the following characteristics: opaque white, slightlykidney-shaped, smaller than other varieties of cannellini, very thin skin andmild flavor due to the limited flouriness paste. The fresh product is availablesince June to September; the dry since the end of October until the following spring.
