The bean “stringa” (string ) from Lucca is a climbing bean of indeterminate growth and maturation scale to consume fresh, whole pod, before thedifferentiation of the seeds (given the complete absence of filaments tough in areas sutured by seeds: bean “wireless”). The pods, light green, is considerably lengthened (also 70-80 cm) from which the name string. The seed is a pinkish color (unlike all the beans like and bearing seed black or otherwise dark red) and is rather small. The classical method of packagingprovides strings previously graded by length. The string bean of Lucca is verytasty with a flavor of delicate herbaceous and it is advisable to prepare boiledand season with a good EVO oil or stewed with tomato sauce and onion from Lucca.
